For more than 10 years, TOWT has been aging alcohol at sea for its own account or for third parties by loading barrels of rum, cognac, brandy, etc. on old rigs. The unique action of this environment accelerates aging and enhances aromatic notes while maintaining freshness. Wave height, slow temperature changes, humidity, atmospheric pressure and salinity, interactions between barrels, etc. are all factors that make your production unique.
One of our oldest customers, BlackMountain Distillery has even created their own line.

When we designed our Phénix class, a modern sailing cargo ship, we wanted to be able to offer this dynamic aging service on a much larger scale.
More than 100 barrels can be aged in the hold at the bow of the ship, known as the calette. This floating cellar integrates all the technologies to monitor humidity, wave height, temperature, etc.
